Vegan roast dinner...it CAN be done with IMMENSE results

We made an EPIC roast dinner!! (we always do)

So i got a can of
Mock Duck as my meat substitute. I am disgusted by substitutes that taste like meat- what's the point in it ?! I'm vegan- I don't want to eat meat! But I love this stuff. It doesn't taste like duck (as far as I can remember) it just reminds me of tofu really!!  Anyway- you should give it a try!

The tin has no cooking instructions on that i could find- so i just bunged it in the oven, in it's own gravy, with the roast potatoes until it was going kind of hard on the tops that were out of the gravy. Delicious :D

There are some yorkshire puddings made from the egg replacer I spoke about earlier too.

Steamed cabbage, green-beans, peas, carrots and broccoli- all complete with stuffing balls and gravy on the side :D

Vegan Pancakes

So... being 21, I decided to try my hand at some pancakes for breakfast as a treat.

I used a basic pancake batter recipe;
I replaced the milk with soy milk and the egg with egg replacer.
Just follow the instructions there.
I found that after following these instructions mine turned out too think so I just added more soy till I thought it was thin enough.

Butter a pan and add enough mixture to cover the bottom of the pan. Cook on a high heat till the bottom is cooked then flip over and cook the other side. Serve immediately and put what ever the hell you want on there!

( I put strawberries and Swedish Glacé ice-cream :D)

This is the egg replacer I used.
I got it from Global Fruits in Ipswich.

And on the left is the finished result!

Bon appétit!
